You do the work the night before. Come morning, it’s time to eat.

It’s less effort the next day. And you don’t get slammed with a pricey restaurant bill to enjoy it.

Plus, it means you can sleep in. Who doesn’t love that?

From savory strata to sweet French toast, these make-ahead brunch recipes are what your weekend needs.

So hit that snooze button. Hosting brunch will be a breeze.

1. Italian Sausage Breakfast Casserole

To start you off on a savory note is a family favorite casserole.

It’s loaded with Italian sausage, diced potatoes, eggs, broccoli, and cheese.

Use any melty cheese you like. I’m big on sharp cheddar.

Either way, fill up the casserole dish and pop it in the fridge. Come morning, it takes about 30 minutes to bake.

2. Creme Brulee French Toast

Dazzle your friends with creme brulee French toast!

This casserole is a decadent sweet treat that screams brunch.

Challah bread has an egg filling with a sticky sweet brown sugar sauce.

It needs at least 8 hours to chill, so you can throw it together the night before.

3. Breakfast Strata

If I haven’t declared it already, I love strata!

As a carb lover, it’s incredibly alluring. It’s basically a casserole dish full of creamy, eggy, cheesy bread.

This one, though, comes with an extra savory filling.

Breakfast sausage, ham, and bacon pack it full of breakfast meat.

And spinach, caramelized onions, and mushrooms complement it.

Is your mouth watering yet? Mine is too!

4. Make-Ahead Baked Greek Omelet

Omelet stations are a fun brunch idea. But they can entail quite a bit of work.

But not with this make-ahead omelet!

Mix eggs, milk, and mustard with sauteed bell peppers, onions, and spinach. Pour it into a casserole dish and chill until morning.

While it’s baking, you can spend more time drinking mimosas and hanging out with company.

5. Make-Ahead Egg Cups

These poppable bites are the perfect brunch appetizer.

They use simple ingredients like eggs, bell peppers, and cheese.

Add ham for meat lovers and leave it out for vegetarians. That’s the beauty of the muffin tin, you can mix and match.

Plus, you can make them up to four nights before. Although, they’re fresher if you make them one night in advance.

6. Cracker Barrel Hash Brown Casserole

Every brunch needs a potato component. And this Cracker Barrel hash brown casserole has it going on.

This carb-laden casserole is chock-full of shredded spuds and cheddar cheese.

But what makes it taste like the real thing? Canned cream of chicken soup!

Add everything to a casserole dish and place it in the fridge. When it’s brunch time, simply bake it and serve.

7. Banana Nut Muffins

Banana nut muffins are sort of a no-brainer. Everyone loves them, and you can easily bake them in advance.

Tender, nutty, and banana-y, they’re a toothsome crowd-pleaser.

Bake them in a mini muffin pan for the perfect little nibbles.

Right before serving, warm them in the oven for a few minutes. That way, they taste as good as freshly baked!

8. Make-Ahead Breakfast Burritos

I love a good breakfast burrito. If your friends do too, prep these for your weekend brunch.

You stuff flour tortillas with cooked eggs, hash browns, bell peppers, onions, and cheese.

For the meat eater, add breakfast sausage. You can also use plant-based breakfast sausage for the vegetarians.

Wrap them in foil and be sure to label what’s inside. They’ll last in the fridge for a few days.

I also like to freeze a couple for myself for the work week.

9. Overnight Blueberry Waffle Casserole

Now, this is what I call decadent!

This casserole is a mess of waffles saturated with sweet custard and topped with a cinnamon crumble.

There are a ton of fresh blueberries in there, too.

Depending on when you’re brunching, you can freeze or refrigerate this sweet treat.

10. Make-Ahead Eggs Benedict

Make-ahead eggs Benedict? I know, I was skeptical too.

Then I tried it and I have to say, it works.

You bake asparagus and bacon and toast the English muffins. Next, blend the Hollandaise sauce and poach the eggs.

When it’s time to eat, reheat, assemble, and enjoy.

11. Easy Overnight Oats

Is it just me or does everyone else love overnight oats? They’re so easy, super customizable, and tasty.

The night before, divide oats, Greek yogurt, chia seeds, and maple syrup among mason jars.

I also like to use almond milk, but any milk will do.

Then set up a station with all kinds of toppings. That way, everyone can build their own.

12. Make-Ahead Quiche

Quiche is a classic brunch staple. And making it in advance is so easy.

Add cheese and ham to the pie crust, mix the creamy egg filling, and pour it on top.

Cover it with plastic wrap and put it in the fridge.

When the company arrives, put it in the oven. It’s really that simple!

13. French Toast Casserole

This French toast casserole is always such a treat.

It gives you the classic breakfast you crave without needing to hover over the stove.

Layer a casserole dish with thick chunks of bread. Pour the egg mixture on top, then sprinkle with cinnamon and sugar.

Add a few dollops of butter while you’re at it. All that’s left now is to chill and bake.

14. Mini Crustless Quiche Cups with Sausage and Cheese

These mini crustless quiches will look adorable on your brunch table.

They only require seven ingredients and the prep work is minimal.

So while you’re busy making other brunch recipes, this one is a breeze.

15. Make-Ahead Frittata Squares with Spinach, Tomatoes, and Feta

Mimosas? Check. Is the table set? Yes.

Now, all you need is frittata!

Come to my house for brunch and you’ll find this staple on the table.

Suspended in a fluffy egg mixture is a fresh medley of the best fillings.

It goes stellar with breakfast potatoes, cheesy grits, and fresh fruit. (Just in case you need some ideas.)

16. Loaded Overnight Breakfast Casserole

Loaded might just be an understatement, as this breakfast casserole is overflowing with all the breakfast staples.

Trapped inside the egg base is Italian bread, two types of cheese, herbs, sausage, and bacon.

That’s not all. There’s also a fresh garnish of sour cream, chives, and parsley.

The only thing you need now is an assortment of hot sauces.

17. Make-Ahead Waffles

The problem with waffles is you can only make one at a time. When you’re feeding a crowd, this isn’t ideal.

Enter make-ahead waffles.

Just like it sounds, you make the waffles ahead of time. Then, all you have to do is heat them and eat them.

Well, and grab the maple syrup and butter, too.

18. Make-Ahead Pancakes

Nothing brings the family together like a high stack of brunch pancakes.

Like waffles, you can also make pancakes in advance.

You mix the batter, pour it into a Mason jar, and refrigerate it.

When Sunday morning rolls around, heat the griddle and flip some flapjacks.

19. Twice-Baked Make-Ahead Cheese Souffle

Twice-baked cheese souffle is a show-stopping stunner!

Your guests will marvel at this masterpiece and ask how?

By baking it twice, you get a towering souffle that’s cheesy, creamy, and freezer-friendly.

Defrost it in the fridge the night before brunch. Then, bake it with the luscious cream sauce.

20. Ham Casserole with Broccoli and Rice

This casserole tastes like all the comforts of home.

It’s a super creamy mix featuring cream of chicken soup that smothers ham, broccoli, and rice.

For textural contrast, sprinkle buttery Ritz crackers on top.

Like most savory casseroles, it’s not proper comfort food without cheese. So don’t skimp on the cheddar.

After a serving of this, a nap might be in order.

21. Make-Ahead Breakfast Enchiladas

These enchiladas are the perfect balance between brunch and lunch.

The filling consists of eggs, ham, and cheese, while the outside has a healthy dose of salsa, sour cream, and cilantro.

For tortillas, corn or flour both work. Either way, place the dish in the refrigerator to let it set.

To take it up another notch, serve with homemade salsa and hot sauce, too.

22. Make-Ahead Huevos Rancheros Wraps

Give brunch a fun fresh twist with these huevos rancheros wraps.

You’d pay big bucks for this at a restaurant, especially if you’re pairing it with mimosas

Luckily, you won’t have to fight the morning crowds or the long wait.

This is great because the chorizo, egg, and smoky salsa filling is mouthwatering!

To make these ahead, prep everything and place them in separate containers.

Then, before serving, assemble them, heat them up, and load on the toppings.

23. Restaurant-Style Shrimp Cocktail

Fix up a round of bloody Marys and get brunch started with this shrimp cocktail.

It’s a quick brunch appetizer you can whip up in 15 minutes.

Cook the shrimp, mix the sauce, then refrigerate.

While you’re reheating your make-ahead spread, pop this on the table. It’s fuss-free and a surefire thing.

24. Crockpot Breakfast Potatoes

From casseroles to breakfast sandwiches, Crockpot breakfast potatoes are a must.

This is the quintessential brunch side that goes with virtually everything.

It pairs well with savory casseroles, breakfast sandwiches, quiche, you name it.

Not only do you make it in the Crockpot, but you can reheat the spuds in it, too.

This recipe is also flexible, so you can try it with different veggies or spices.

25. Everything Bagel Breakfast Casserole

I know you already have many incredible breakfast casseroles to choose from. But this one has brunch written all over it!

Crammed inside are everything bagels, bell peppers, onions, eggs, cream cheese, and bacon.

Also, add any type of melty cheese you fancy. Mozzarella goes nicely. I also like the bite from white cheddar.

This is a fantastic use of day-old bagels. You can also freeze it for a rainy day.

26. Overnight Cheesy Grits Casserole

Give your brunch a taste of the South with cheesy grits.

Grits are a Southern staple you can eat with almost everything, brunch included!

Plus, it only calls for six ingredients. So why not add it to the spread?

Cozy, cheesy, and down-home tasty, your friends will rave about it.

27. Make-Ahead Breakfast Biscuit Sandwiches

These breakfast sandwiches are foolproof.

The homemade buttery biscuits are as flaky as can be.

Make them with cheddar cheese, bacon, and eggs.

Then, bundle them up with plastic wrap. All they need is one minute in the microwave.

Alternatively, you can reheat them in the oven on a sheet pan.

I find this method gives them a better texture. It also lets you reheat more at a time.

28. Crescent Bacon Breakfast Ring

Need an idea for Father’s Day brunch? Go with this breakfast ring.

Nothing says “I love you, dad” like bacon. And this dish is full of it.

Trapped inside a warm buttery crescent dough is a scrumptious cheesy bacon egg filling.

It looks impressive, tastes sensational, and you make it the night before.

I have a good hunch this will become a new tradition.

29. Homemade Overnight Cinnamon Rolls

Who doesn’t love a warm, gooey, freshly baked cinnamon roll?

These overnight cinnamon rolls are the best brunch dessert. They’re sweet and ready to eat.

From the dough to the icing, everything is from scratch.

Sure, they’re a labor of love, but your kids and friends are worth it.

30. Overnight Yeasted Glazed Donuts

Celebrate the weekend with homemade glazed donuts.

Sinfully guilty, but too good to resist, everyone will want a little nibble of this.

Like the cinnamon rolls, they don’t come together quickly. But if you like baking, they’re fun to make.

And they’re so good, your friends will be asking what bakery you bought them from.

Little do they know, you made them in the comfort of your own home.
