That said, I’ve served the yummy Dorito casserole for brunch more than once, and it’s always a hit.

So, no matter when you choose to make them, you’re in for a mouthwatering meal with these 27 Mexican casserole recipes.

1. Easy Taco Casserole 

Taco Tuesday has never been this quick! Just take all the taco fillings you love and bake them in a casserole for a fun weeknight dinner

This one is packing savory ground beef, melty cheese, salsa, and tortilla chips to scoop it all up.

If you want other ingredients, add those in too. There are plenty of different variations you can make from this single recipe.

2. Mexican Mac and Cheese (Baked Macaroni and Cheese) 

Nobody can resist a gooey mac & cheese, and this one tops the charts.

The Mexican twist in this recipe comes from the taco seasoned pork sausage and green chiles. Oh, and the fact both of those are swimming in salsa verde. 

While the pork is spot on, I do think ground beef, turkey, or a vegan protein will work equally as well.

3. Carnitas Pulled Pork Enchiladas

Carnitas are the holy grail of authentic Mexican cuisine, and these enchiladas are chock-full of tender pork.

They also have some hearty pinto beans, rice, and green chilis in the mix too.

Throw in some spicy enchilada sauce and cheese, and these enchiladas mean serious business. But not so serious that you can’t have these on the table in an hour.

4. Walking Taco Casserole

What’s a walking taco casserole, you ask? It’s a mashup between taco salad and nachos all in one scrumptious casserole dish. 

The bottom layer is full of ground beef, while the top is an abundance of fresh goodies like lettuce, jalapeños, tomatoes, and cheese. 

The secret, however, is the layer in between. It’s a heavy handful of crunchy corn chips just waiting to be demolished.

5. One-Pot Cheesy Rice Chile Relleno Casserole

Between the grating, stuffing, battering, and frying, Chili Rellenos require a ton of work.

Luckily, this version dials it down a bit by turning them into a slightly healthier version in casserole form. 

You’ll still char the peppers and remove the seeds as usual. But rather than stuffing, you’ll cook them with rice and a few extra ingredients like Oaxaca cheese, tomatoes, and oregano. 

It’s not as saucy as most Rellenos, but it’s delicious in its own way.

6. Beefy Cheesy Green Chile Bake 

I love this cheesy-chili casserole for breakfast, but it’s satisfying and tasty no matter the time of day.

The beef and eggs make it very hearty, but the roasted green chiles are my favorite part. 

Well, that and the fact the whole casserole is smothered in Mexican cheese.

Add a couple of dashes of hot sauce, and it’s pretty close to perfect.

7. LOADED Chicken Taco Casserole

When I say this chicken taco casserole is “loaded,” I mean these things are loaded

This 20-minute meal features a layer of refried beans, juicy shredded chicken, and a topping with the works. It’s like tacos and bean dip combined into one plate. 

How could you ask for anything more?

8. Tamale Pie

Another authentic Mexican dish I love, that’s also very time-consuming, are tamales. Although I admit this isn’t quite the same, it’s close enough and lightning-fast. 

The bottom layer has all the yummy filling flavors, including a gratifying mix of ground beef, canned tomatoes, cheese, spice, and an assortment of other veggies.

And on top is a tender cornbread recipe to mimic the masa. Yum!

9. Mexican Ground Beef Casserole with Rice 

This 30-minute meal is one of my favorite easy ground beef recipes ever, and it’s all down to the homemade Mexican spice blend.

Never made your own spice blend before? Don’t worry; it’s insanely easy, and I bet you have all the components in the pantry already.

The beauty of making your own blend is that you can control the heat. So, although I typically add extra cayenne, you could up the paprika instead to make it more smokey.

Add in some rice, black beans, veggies, and cheese; then boom, you’ve got a scrumptious Mexican casserole hot on the table in a flash.

10. Salsa Verde Chicken Casserole

If you love salsa verde as much as I do, you’ll go nuts for this bright and tender chicken recipe. 

This casserole is like the green goddess of the carnivorous Mexican world. 

Not only does it call for a hefty amount of salsa verde, but there’s also some vibrant jalapeños and fresh cilantro to boot. 

11. Cheesy Baked Chilaquiles

I bet you never thought it would be this easy to make a batch of delectable chilaquiles. And when you turn them into a casserole, it becomes even more straightforward!

This classic Mexican breakfast gets a fun twist with just eight ingredients, including eggs, cheese, and tortilla chips. 

Add as much or as little salsa as you like. I’m pretty heavy-handed, but you can quickly adjust it to your liking.

12. Mexican Lasagna 

Are you craving an easy Mexican ground beef recipe for dinner tonight? Then, quit the search because you should make this. 

It’s not exactly lasagna, but it layers like one. You’ll use flour tortillas as your lasagna sheets and ground beef for the filling. 

While you’re at it, add a mixture of black beans, bell peppers, and corn to the beef. Oh, and don’t forget the cheese!

13. Sopa Seca de Fideo

If the last recipe has you craving a Mexican lasagne that’s more Italian than South-of-the-Border, try this.

Sopa Seca de Fideo is essentially a Mexican casserole with noodles. 

You’ll cook Fideo noodles in tomatoes and broth, then top with fresh fixings like avocado and queso fresco. 

It’s not your traditional pasta dish or casserole recipe, for that matter! But it’s seriously worth trying. 

14. Breakfast Enchilada Overnight Bake 

The best thing about this recipe is that you’ll prep it the night before. That means all you have to do in the morning is throw it in the oven for a simple hands-off breakfast feast.

Whether it’s a busy weekday or you’re having guests over first thing, it’s a win-win. 

And so is the ingredient list. It only calls for seven savory and fresh items, including eggs, cooked steak strips, and salsa.

If you don’t have steak strips, I think this would make a terrific sausage breakfast casserole.

15. Baked Burrito Casserole

This is a fun way to turn a burrito into a family affair. The ground beef has a delightful Mexican seasoning, while the cream of mushroom soup adds a unique twist. 

Of course, it’s not a mega burrito without the refried beans, cheese, salsa, and sour cream.

And don’t forget the tortilla – that’s the most important part!

16. Mexican Green Chile Rice Casserole 

If you love easy Mexican rice, wait until you try this version.

The casserole is packed to the brim with a bed of rice spiced up with roasted poblano peppers.

To make the dish extra creamy, you’ll coat everything with sour cream and top it with cheddar cheese.

17. One Skillet Mexican Rice Casserole 

Another excellent way to turn Mexican rice into a meal is like this.

You’ll spruce up white rice with some Mexican-style fillings like black beans, corn, and green chilies. Then, slather it all in enchilada sauce and broil it until the cheese starts to bubble.

18. Dorito Casserole

Though this may not be the healthiest casserole, it’s a fun one for a cheat day or game day with friends.  

It’s a combination of taco seasoned ground beef, cheese, and salsa. All of which gets loaded on top of a bed of nacho cheese Doritos. 

19. Taco Stuffed Pepper Casserole

If flavor’s what you want, flavor’s what you’ll get with this easy casserole. 

Use instant rice to cut down on some of the work. Then fix it up with some savory ground beef, tomato sauce, and cheese. 

Of course, you’ll need some bell peppers, too, to make it taste like a deconstructed stuffed pepper.

20. Tater Taco Casserole 

The kids will love tater taco casserole night, and I’m sure you will too!

These crunchy carb-laden spuds are full of savory goodness and some fresh toppings to make the casserole pop. 

For a leaner version, I think ground turkey would work too. You can also leave it out to make this a vegetarian casserole.

Or, for a boost of protein, try making tofu “ground beef.” Just break up a block of firm tofu until it looks crumbly, then cook it in taco seasoning. How easy is that?

21. Beef & Black-Eyed Pea Burrito Casserole 

Not sure which Tex-Mex recipe to make for dinner? I think this burrito casserole is a good one to try.

It’s savory and saucy thanks to cream of mushroom soup, cream of chicken soup, and enchilada sauce. Plus, it’s packed with protein from beef and black-eyed peas. 

22. Delicious Fiesta Chicken Casserole

I have plenty of favorite Mexican Crockpot recipes you can whip up in a jiff.

What’s great about this one, though, is that it’s a 20-minute dinner that satisfies your cravings for Mexican food in a flash. 

Just toss the chicken, pasta, and Mexican accompaniments in the pot and let it do its thing. Once it’s done, you’ll transfer it to the oven to get the cheese nice and gooey.

23. Chicken Fajitas Casserole

Another fabulous use of your casserole dish is making these tasty deconstructed chicken fajitas.

Full of tender peppers and onions along with shredded chicken, this is filling, delicious, and colorful to boot.

Of course, it wouldn’t be a Mexican casserole without a topping of cheese!
