And if you don’t have Russet potatoes on hand, Idaho potatoes work, too.
Just steer clear of waxy potatoes like red potatoes or fingerling potatoes. The high moisture content won’t create that crispy exterior.

- Butter – Use unsalted butter in this recipe because it uses quite a bit. If you use salted butter, your spuds will be overly salty. Adding more salt to this dish is much easier but harder to remove!
- Salt and pepper – For this recipe, salt and pepper are all you need. However, to add more flavor to your potatoes, add whatever seasoning you like.
How to Make Home Fries
Making home fries at home that are better than anything at a restaurant is so quick and easy.
Follow these quick instructions for perfect home fries.
1. Wash and dry your potatoes. Even though you’ll likely peel and discard the skins, always wash and dry your potatoes before cooking.
2. Peel and cube. Cube the potatoes in even 1-inch pieces, and cut them as evenly as possible. If they’re uneven, they won’t cook evenly in the pan.
3. Cook the potatoes. Melt the butter in a pan under medium heat, and add the cubed potatoes and seasoning. Cover it tightly with a lid and simmer it for 10 minutes.
4. Create a crispy crust. Remove the lid, and continue cooking the potatoes for 10 more minutes. Stir occasionally to ensure all sides are nice and brown.
