Ingredients

  • 2 cups diced zucchini

  • 1 can chickpeas (drained and rinsed)

  • 1 cup grape tomatoes (halved)

  • 3/4 cup red bell pepper (chopped)

  • 1/2 cup sweet onion (chopped)

  • 1/2 cup feta cheese (crumbled)

  • 1/2 cup Kalamata olives (chopped)

  • 1/3 cup olive oil

  • 1/3 cup packed fresh basil leaves (roughly chopped)

  • 1/4 cup white balsamic vinegar

  • 1 tablespoon fresh rosemary (chopped)

  • 1 tablespoon capers (drained and chopped)

  • 1 clove garlic (minced)

  • 1/2 teaspoon dried Greek oregano

  • 1 pinch crushed red pepper flakes (optional)

  • salt and ground black pepper to taste

Instructions

  • In a large bowl, thoroughly mix all ingredients.
