Ingredients

  • Coffee Cake:
  • 3/4 cup unsalted butter, melted and cooled

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar, tightly packed

  • 2 large eggs, lightly beaten

  • 1 cup pumpkin puree (not pumpkin pie filling)

  • 2 tablespoons sour cream or Greek yogurt

  • 1 1/2 teaspoon vanilla extract

  • 1 1/4 cups all-purpose flour

  • 2 teaspoons pumpkin spice

  • 1/2 teaspoon ground cinnamon

  • 3/4 teaspoon baking powder

  • 3/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • Streusel Topping:
  • 1 cup all-purpose flour

  • 3/4 cup granulated sugar

  • 6 tablespoons salted butter, melted

  • Glaze:
  • 1/2 cup powdered sugar

  • 2 -3 teaspoons milk

  • 1/4 teaspoon vanilla extract

  • zest of 1/2 an orange

Instructions

  • Preheat oven to 350 degrees Fahrenheit and line a 9×9 baking pan with parchment paper.
  • In a large bowl, combine melted butter, sugar, and brown sugar. Beat in the eggs, pumpkin puree, sour cream, and vanilla extract until well combined.
  • In a separate bowl, whisk together flour, pumpkin spice, cinnamon, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Avoid over-mixing.
  • Spread the batter evenly into the lined pan. Set aside.
  • Prepare the streusel topping. In a bowl, whisk together flour and sugar. Pour in the melted butter and stir with a fork until crumbles form. Sprinkle the streusel topping evenly over the pumpkin batter.
  • Bake for 30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before adding the glaze.
  • Meanwhile, make the glaze. Whisk together powdered sugar, milk, and vanilla extract. Adjust the milk quantity to achieve the desired consistency. Add the orange zest just before drizzling.
  • Drizzle the glaze over the cooled pumpkin coffee cake and cut into squares.
