How to Make Pasta alla Vodka

Here’s how to make pasta alla vodka:
1. Cook the pasta. Cook according to the package instructions until al dente. Reserve 1 cup of pasta water.
2. Saute the aromatics. Saute the onion in olive oil for about 5 minutes. Add the garlic and red pepper flakes. Cook for 1 minute.
3. Make the sauce. Add the vodka to the garlic and onion. Simmer for 2-3 minutes. Stir in the crushed tomatoes, salt, and pepper. Simmer for 10 minutes, stirring occasionally.
