Of course, some muffin recipes are more like unfrosted cupcakes, full of sugar, dairy, and all kinds of unhealthy extras.

But these vegan muffins almost all fall on the “healthy” side of the spectrum. And just because they’re “healthy” doesn’t mean they aren’t incredible.

Vegan or not, these babies are sure to satisfy! Plus, they’ll keep you full all the way until lunch.

1. Vegan Blueberry Muffins

These soft, fluffy muffins have a mouthful of tangy blueberries in every bite.

They’re sweet and moist, and frankly, they don’t taste “vegan” at all.

There’s also a zesty kick of lemon to make them even better. Unless you tell people, most won’t realize these are vegan-friendly.

2. Chocolate Chip Vegan Muffins

Fortunately, being a vegan doesn’t mean you have to give up chocolate. That’s why these muffins are downright decadent, vegan or not.

They’re dense and tender, with a dash of cinnamon and bananas for added sweetness.

The chocolate is warm and gooey, and you won’t be able to stop after just one.

Be sure to check the chocolate – milk is a no-no, so go for something delectably dark.

3. Peanut Butter Chocolate Zucchini Muffins

These muffins are gorgeous and super sweet. In fact, I bet no one will believe you made them with zucchini.

They combine the rich, indulgent flavors of chocolate and peanut butter, and they’re super moist, thanks to the greens.

Add some brown sugar and crunchy peanuts to the mix, and WOW. These are over-the-top incredible.

4. Double Chocolate Banana Muffins

Are you a bit of a chocoholic? If so, these double chocolate muffins are the treat for you.

The muffins themselves are soft, fluffy, and supremely chocolatey. But you’ll also add chocolate chips to push it over the edge!

Some maple syrup and a generous helping of ripe bananas bring some natural, delightful sweetness.

It’s hard to believe something so good could be healthy.

5. Vegan Spinach Muffins

These fun green muffins are perfect for a Grinch-themed brunch. They’d also work well for Dr. Seuss’s birthday.

And don’t worry about the spinach; these are 100% kid-approved!

Note: Be sure to melt the coconut oil before using it.

Also, though it may be tempting, don’t add extra spinach! Doing so introduces too much moisture into the batter, and it’ll deflate.

6. Double Chocolate Zucchini Muffins

Here’s another vegetable-based muffin that tastes too indulgent to be nutritious.

Fortunately, they’re healthy nonetheless.

They’re chocolatey and filling, more crumbly than fluffy. Still, if you love a good chocolate muffin, you’ll certainly appreciate these.

7. Crispy Vegan Corn and Blueberry Muffins

There’s something special about this recipe and how the sweet corn taste pairs perfectly with the slight crunch of the muffin crust.

In short, these muffins are irresistible! Plus, they’re easy to make and perfect for a quick snack or breakfast on the go.

If you need to satisfy a muffin craving, these are ideal.

8. Vegan Apple Muffins

These moist, fluffy muffins are filled with juicy chunks of diced apples.

Add in a bit of cinnamon and brown sugar, and you’ll have the perfect fall treat.

Best of all, you can whip them up in one bowl with just a handful of ingredients. It’s hard to say no to that.

9. 1-Bowl Carrot Apple Muffins

If you love carrot cake, you’ll appreciate these gluten-free carrot muffins. Unfortunately, there’s no cream cheese icing, but there’s plenty of other tasty stuff.

You’ll make them with carrots, cinnamon, and raw walnuts, plus bananas and applesauce for sweetness.

They’re tasty, filling, and deliciously dense. So if you want a healthy on-the-go breakfast, these are just the thing.

10. Easy Vegan Blueberry Banana Muffins

There’s only one combination I love more than chocolate and peanut butter, and that’s blueberries and bananas.

Nothing can beat the blend of sweetly tart, fruit, and berry flavors.

Plus, these muffins are egg-free, dairy-free, and use fewer than ten ingredients. You’ll have them ready in 30 minutes or less, too!

11. Vegan Cranberry Orange Muffins (Oil-free)

These bright, citrusy muffins will make you weak in the knees.

And that sweet, sticky orange glaze? It’s too delectable to describe.

These are, hands down, the tastiest vegan muffins you’ll ever try.

I’d say you won’t be able to stop at just one, but honestly, I’m not sure you’ll be able to stop at three.

12. Soft Moist Triple Ginger Vegan Gingerbread Muffins

If you’re a fan of ginger, these will be a hit. They’re a triple threat with fresh ginger, ground ginger, and candied ginger!

They have a robust, super spiced flavor that’s perfect for the holiday season.

Gingerbread houses may be more fun to make, but these knock them out of the park in the taste department.

13. Vegan Strawberry Muffins

These strawberry muffins are light, bright, and ideal for summer brunch.

They taste so fantastic that even strawberry shortcake lovers will swoon.

It takes about 45 minutes to whip up a dozen, and I suggest you let them cool to keep from burning your tongue.

Either way, they’ll be gone in a flash.

14. Espresso Chocolate Chip Breakfast Muffins

Do you need some extra ‘get up and go’ in the mornings? Me, too.

So, do yourself a favor and make these insanely tasty espresso and chocolate breakfast muffins.

They feature the rich, warm flavors of espresso and chocolate. And that little bit of extra caffeine is bound to put a little more pep in your step.

15. Vegan Lemon Zucchini Muffins

These muffins are a fluffier, slightly sweeter version of zucchini bread. However, they also have a bright burst of lemony goodness to set them apart.

They’re easy muffins to love with their tender crumb and pillowy centers.

Plus, they’re pretty good for you, too, and that’s always a nice treat.

16. Vegan Cinnamon Roll Muffins

These muffins don’t have the sweet and sticky glaze you’ll find on cinnamon rolls. I know, what a bummer!

However, each one does feature an incredibly indulgent cinnamon swirl through the center.

It doesn’t matter if you want a sweet pastry for breakfast or a midday treat; these will satisfy your cravings.

They’re less messy to eat, too.

17. Funfetti Muffins (NO flour!)

Pardon the pun, but funfetti muffins are just plain fun!

They feature bright colors, sweet flavors, and a melt-in-your-mouth crumb even without the frosting.

And the kiddos love them, even though they’re gluten-free and vegan-friendly. (Don’t tell them, and they’ll never know.)

Take these a step further by adding a sweet, creamy frosting made with vegan butter, confectioner’s sugar, and vanilla extract.

They look and taste more like cupcakes than muffins, so they would work well for birthdays!

Note: This muffin recipe calls for eggs, so you’ll need to substitute applesauce or flax egg instead.

18. Vegan Peanut Butter Banana Muffins (GF)

Between the bananas, chocolate chips, and peanut butter, these insatiable muffins also feature buttery walnuts, sweet maple syrup, and a hint of cinnamon spice.

These muffins are 100% vegan and 150% decadent.

Give these a try the next time you want something outrageously delicious.

19. Matcha Latte Mini Muffins

Sweet, green, and wholesome, matcha mini muffins have it all!

They look adorable with or without the optional icing. Even more importantly, they taste better than they look.

They’re only slightly sweet and have a mild green tea flavor.

Still, they’ll satisfy your sweet tooth and won’t leave you feeling heavy or guilty afterward.

20. Vegan Gluten-Free Peach Muffins

These sweet, fruity muffins are jam-packed with peachy flavor.

They’re bright, warmly spiced, and almost taste like peach cobbler (in a smaller package, of course).

They’re gluten-free as well as vegan-friendly and not too high in calories.

I like them as a comforting breakfast, but they work just as well as an indulgent after-dinner treat.

21. Raspberry Jam Swirled Almond Butter Muffins

Not to sound too dramatic, but these muffins are my newest obsession. They are seriously scrumptious, and I know you’ll fall in love.

Loaded with almond butter and raspberry jam, they’re moist and flavorful. Not to mention, they’re gorgeous.

Be sure to check them out if you want something to impress.

22. Pumpkin Gingerbread Muffins

These 22-minute muffins are light, fluffy, and so filling. They are terrific fall treats in a tiny package.

They’re sweet and pumpkiny with a crunchy walnut topping. Don’t be surprised if your friends beg you for the recipe.

23. Chunky Monkey Muffins (Vegan and Refined Sugar-Free)

As much as I love fluffy muffins, I like a bit of crunch in my food. That’s why I love these Chunky Monkey muffins.

These are soft on the outside and sweet all the way through. But they also include walnuts and chocolate chunks for texture.

If you like filling muffins with peanut butter and chocolate, you’ll love them.

24. Zucchini Carrot Muffins

These tender, chewy muffins are unbelievably nutritious.

For maximum moisture, you’ll make them with a powerhouse of healthy ingredients, including carrots and zucchini.

There are also oats, bananas, cinnamon, almonds, walnuts, and more. These are a yummy, nutrient-rich way to start your day.

25. Festive Vegan Cupcakes

Need something new and exciting for the Christmas season?

You’ll top these muffins with dried cranberries and pistachios, making them a red and green holiday delight.

They’re also sweet, tangy, and citrusy, and they smell phenomenal.

You don’t have to add the frosting if you don’t want to. They taste almost as good without it.

I recommend using it, though. It makes all the difference.

26. Vegan Egg Muffins (Mini Chickpea Frittatas)

These savory muffins are like tiny frittatas, only without any eggs!

The texture isn’t exactly the same – these are more dense and soft.

That said, the taste is spot-on. They’re the cheesiest, eggiest, meatiest muffins you’ll ever taste.

And that’s pretty impressive since there’s no cheese, meat, or eggs in them.

27. Old Fashioned Cake Doughnut Mini Muffins (Vegan + GF)

Did your grandma ever make you cinnamon-sugar-covered donuts as a child? If so, these are those donuts in muffin form.

These just happen to be vegan-friendly and gluten-free.

That doesn’t take anything away from their terrific taste. They’re sweet, sugary, and totally over the top.

Of all the options on the list, these are the hardest ones for me to call “healthy.”

Yes, they’re vegan and gluten-free, but they’re still pretty…let’s say, “dessert-like.”

In other words, you may not want to indulge in these outside of special occasions.

28. Caramel Apple Muffins

Because you can never have too many sweet fall recipes, here’s one more.

These caramel apple muffins are good enough to entice Snow White to try apples again.

They’re sweet and spongy, with thick chunks of juicy apples in every bite. That right there is enough to make them addictive.

But once you add the caramel sauce, it’s game over. You won’t have any of these bad boys left.

So if you want a few extras just for you, you’d better sneak them out beforehand – or make double to begin with!

29. Vegan Bakery Style Cinnamon Streusel Muffins

Cinnamon streusel muffins are classic bakery-style muffins. They’re soft, fluffy, and full of cinnamon sugar deliciousness.

Believe it or not, these vegan alternatives are just as incredible!

They’re perfectly sweet, perfectly spiced, and perfectly delicious. You’ll love them whether you’re vegan or not.

30. Lemon Blueberry Muffins

I’m a massive blueberry fan. So, it’s hard for me to imagine anything better than a freshly baked blueberry muffin.

These lemon blueberry muffins might just have them beat, though. They’re a flawless combination of tart and sweet, with a soft and fluffy texture.

You’ll also love how easy they are to make.

The recipe is easy to follow, and it’ll take just 30 minutes from start to finish. Whip them up whenever you want something quick, easy, and tasty.
