These Kodiak cake muffins are packed with protein and flavor! The mix of bananas and chocolate chips simply can’t be topped.

Ingredients

  • 2 cups Kodiak Cakes Mix, buttermilk flavor

  • 1 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1 cup milk

  • 2 ripe bananas, mashed

  • 1/3 cup honey or maple syrup

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/2 cup semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350 degrees Fahrenheit (175°C) and lightly coat a muffin tin with cooking spray. Or add muffin liners and set aside.
  • In a medium mixing bowl, whisk the Kodiak Cakes mix with the baking powder and cinnamon until well blended.
  • In a separate large bowl, whisk the milk, mashed banana, honey, egg, and vanilla until smooth. Add the dry ingredients and gently stir with a spatula until about halfway blended. Add the chocolate chips and finish mixing until just combined and no flour streaks are visible.
